In our quest to find interesting restaurants, Hispanic Lifestyle was introduced to Colibri Mexican Bistro which is located in the heart of San Francisco’s theatre district.
Founded by Edurado and Sylvia Rallo, the husband and wife team share Mexico’s timeless traditional cooking with bay area residents.
In a Hispanic Lifestyle exclusive Chef Edgar prepares three of Colibri’s signature dishes. First up is (Fillet Mignon) Filet Mignon with ancho chile stuffed with seasoned goat cheese, over mashed potatoes with sautéed spinach and chipotle chile sauce.
Item Number 2 Panuchos de Cochinita Pibil axiote seed marinated roasted pork, shredded over hand made corn shells stuffed with refried black beans, served with avocado, habanero pico de gallo and pickled red onions.

We finished our evening with a first for me and that was watching how they prepared one of their signature libations,the Mancho Margarita. First They doused jalapeno’s with Cointreau light them on fire, added Tequila, and then served on the rocks.

Located in all 50 states, Small Business Development centers provides education services for small business owners and aspiring entrepreneurs.
Hispanic Lifestyle had a chance to meet with Vincent McCoy Executive Director at Inland Empire Small Business Development Center (SBDC). Mr. McCoy spoke about how the SBDC measure the success of its program.
Given the current state of our economy, I asked Mr. McCoy what advice he is giving to business owners.
Our conversation turned to discussing if establish businesses were seeking assistance.

With nearly 100 educational centers designed to assist women start and grow small businesses, Women’s Business Centers (WBCs) represent a national network who’s mission to “level the playing field” for women entrepreneurs.
Hispanic Lifestyle spoke with Michelle Skiljan director of the Inland Empire Women’s Business Center about the types of services they provide to business owners.
Michelle went on to talk about the importance of business being open minded to receiving advice and mentorship.
Turning our attention to starting a business, I ask Michelle what she felt would be a key piece of advice for aspiring entrepreneurs.
